Good things come to those who wait, right?
I mean, Guinness have hung their hat on that for donkeys. And usually, I’d agree.
Appassimento is a process of drying the grapes for a few months to get an extra concentrated flavour. A bit like sundried tomatoes. Or, you know, raisins – which would, in hindsight, have been a better analogy seeing as they’re dried grapes.
It’s what they do in Italy to make their flagship wine, Amarone.
That extra time spent in the winemaking process results in a richer-tasting wine. And this is no different.
It’s a dry wine. But it’s too cloying for me. It tasted like honey bees had pollinated Gandhi’s flip flop.
If you like sweeter, full bodied reds, then you’ll probably like it but even on offer at £8 I think you could find better examples of that style of wine.
